Instructions

Step 1

First, we need to boil the chicken breast. So, rinse it and place it in a pot with water. Add a peeled onion cut in half, carrot, bay leaf, and peppercorns. Cook the chicken for 30–40 minutes after the water starts boiling.

Step 2

When the boiled chicken breast has cooled slightly, remove the skin and bones, then cut the meat into small pieces.
- 3
Step 3

Now slice the cooked carrots into half-rings.
- 4
Step 4

Then place the butter in the pan and melt it.
- 5
Step 5

Pour in the flour and sauté for 1-2 minutes.
- 6
Step 6

Now gradually pour the chicken broth into the skillet, constantly stirring the liquid. When the mixture becomes smooth (without lumps), bring it to a boil, add the lemon juice, and season with salt and pepper.
- 7
Step 7

Place the meat, carrots, and previously boiled peas on the frying pan.
- 8
Step 8

Quickly whisk the yolk with the cream in a separate bowl and pour this mixture into the pan. Bring the fricassee to a boil over low heat and remove from heat.

Step 9

The finished dish can be served with any side dish of your choice.
