
Turkey fricassee

In the past, fricassee was peasant food, and only thanks to Napoleon (according to legend) did it spread among the upper classes. I think you've already guessed that, since this dish was once food for the poor, the recipe for turkey fricassee is not only very simple but also quite economical. In the original version, chicken or other white meat is used to make fricassee, so turkey works very well here too. First, cut the meat into small cubes. Pour olive oil into a frying pan and melt a piece of butter in it, then sauté the turkey.

When the meat turns a nice golden color, transfer it to a bowl. In the same pan, sauté the finely chopped onion and a whole garlic clove.
