Rinse the chicken and pat dry. Cut the chicken thighs in half.

Coat the chicken in flour and place it in a heated pan to fry in vegetable oil until a golden crust forms.

Peel the onion and carrot and cut into large cubes. Rinse the mushrooms and slice them.

When the chicken is browned, transfer it to another dish. In the same skillet where the chicken was cooked, add the carrots and onions, and sauté until golden.

Add mushrooms and garlic to the pan. Sauté together for about 5 minutes, return the chicken to the skillet, and pour in the wine. Simmer until the wine reduces by half, about 2–3 minutes.

Transfer everything to a baking dish and place in a preheated oven at 180 degrees for 45-50 minutes.

While the chicken is baking, prepare the sauce. Mix egg yolks with cream, season with salt and pepper, add lemon juice. Place over low heat and cook until thickened, about 5-7 minutes.

When the chicken is cooked, remove it from the oven, place it on a serving dish, and pour the creamy sauce over it. Garnish with thyme sprigs.
