
Meatballs with rice
Description
Making meatballs is easy, and it's best to use meat and rice—they won't fall apart that way. For rice meatballs, I recommend preparing your own ground beef (you can add a little pork). Use short-grain rice, as it's stickier. Sometimes I just freeze the meatballs and later add them to soup. But more often I stew them with carrots—they taste better fresh.

Prepare the ingredients.

If you're making meatballs from chicken, the minced meat will be a bit dry—add some butter.

Grate the carrot on a coarse grater. Finely chop the onion.

Sauté the onion with the carrot in oil until golden brown.

Boil the rice (you can stop before it's fully cooked).

Mix the minced meat, eggs, rice, and vegetables.

With wet hands, shape the meatballs and fry them in oil.

Sear until golden brown. They don't need to be fully cooked yet, as we'll be simmering them later.

Transfer the meatballs to a pot, pour in water, add the remaining sautéed vegetables and bay leaf.

Simmer covered for about 40 minutes. Serve the ready rice meatballs with vegetables and fresh herbs.
