
Meatballs made with minced meat and eggplant

1. Prepare the ingredients.

2. Wash the eggplants, cut them in half lengthwise, brush the tops with vegetable oil, and place them in a hot oven for 20 minutes (200 degrees).

3. Let the cooked eggplants cool slightly, then scoop out the pulp with a spoon and discard the skin.

4. Turn the eggplant flesh into a purée using a chopper.

5. Wash the meat, cut it into pieces, and grind it into minced meat using a meat grinder or food processor.

6. Combine the pork and eggplant mince, add egg, spices, and salt. Mix thoroughly or pass through a meat grinder together. Add breadcrumbs, otherwise the mince will be too runny.

7. With wet hands, take the filling and roll it into balls. Roll each ball in sesame seeds. I made some with white sesame seeds and some with flour; black sesame seeds also work well.

8. Fry the meatballs in vegetable oil in batches for 5-7 minutes, turning them over.

9. Line a heatproof baking dish with parchment paper, place all the meatballs in it, and bake in a preheated oven for 20 minutes (set the oven temperature to 180–200 degrees, adjust according to your oven).

10. Eggplant and meatball patties are ready!

11. Serve them hot with your favorite sauces. I like them with sour cream sauce (sour cream + herbs + garlic).
