Meatballs for soup
Description
The dish is prepared without unnecessary complications. With the given amount of ingredients for the meat mixture, you can make 2-3 portions of the first course. I recommend not reducing the proportions for a single use—freeze part of the prepared meatballs and use them as needed. Admit it—this is very convenient for a quick, delicious, and hearty lunch or dinner. The meatballs turn out tender, aromatic, and hold their shape perfectly. These wonderful meat balls are suitable not only for soups, but can also be baked or stewed in your favorite sauce. Keep this versatile recipe handy. The dish is ready to be served.
Instructions
- 1
Step 1

Prepare all the ingredients from the list. It's best to make the meat mixture yourself; the meatballs will turn out much tastier. You can use any meat, but it's better to choose a slightly fatty kind, or add a small piece of pork fat. Today I'm using pork mince.
- 2
Step 2

Transfer the minced meat to a deep bowl.
- 3
Step 3

You can pass the onion through a meat grinder. I grate the onion on a coarse grater.
- 4
Step 4

Add one egg to the minced meat with onion so that the meatballs don't fall apart in the water.
- 5
Step 5

Add salt and ground pepper to taste. Optionally, you can add any favorite spices. I do not add them. Pass the garlic through a press.
- 6
Step 6

Thoroughly mix the minced meat with your hands.
- 7
Step 7

With wet hands, shape the future meatballs to about the size of a walnut and place them on a board. Add some to the soup, and freeze the rest.
- 8
Step 8

Today I'm going to cook meatball soup with noodles. We'll need: 1 carrot, 1 onion, two garlic cloves, 4-5 potatoes, a couple of tablespoons of vegetable oil, 80 grams of noodles, 2-2.5 liters of water, meatballs, and salt to taste.
- 9
Step 9

Cut the potatoes into cubes and place them in a pot.
- 10
Step 10

Add water and bay leaf. Cook for 15 minutes.
- 11
Step 11

Meanwhile, prepare the sauté. Fry the onion and carrots in vegetable oil until soft.
- 12
Step 12

When the potatoes are almost done, add the meatballs to the pot and cook for 5 minutes.
- 13
Step 13

Then add the sautéed vegetables.
- 14
Step 14

At this same stage, add the noodles. Mix well, adjust the seasoning for salt, and cook for another 10 minutes.
- 15
Step 15

At the very end, add the diced garlic.
- 16
Step 16

Remove the pot from the heat and let the soup steep, covered, for another 5 minutes.
- 17
Step 17

The meatball and vermicelli soup is ready. Serve with aromatic fresh herbs.
