French apple pie
Description
The recipe won't take much time. Use a 20 cm diameter baking pan to make a tall cake. Use green apple varieties, but make sure they're not too juicy, otherwise they'll lose their shape and turn into puree during baking. Instead of raisins, you can use black currants—this works great. Serve with tea or coffee.
Instructions
- 1
Step 1
Soak the raisins for 10 minutes, then drain the water and dry the dried fruit. Peel the apples, remove the cores, and slice them thinly.
- 2
Step 2
In a saucepan, melt the butter, then add the apples, raisins, sugar, and cinnamon. Simmer the apples over medium heat, covered, stirring occasionally, until most of the liquid has evaporated.
- 3
Step 3
Turn off the heat, add rum, mix well, and let the filling cool down.
- 4
Step 4
Combine the sifted flour, sugar, salt, and baking powder. Rub the dry ingredients into the cold butter. Then add 2 eggs and knead the dough. Wrap it in plastic wrap and refrigerate for 40 minutes.
- 5
Step 5
Divide the dough into 2 uneven parts and roll them out to a thickness of 0.5 cm. Transfer the larger part to a greased pan, forming the edges. Place the filling, then cover with the second part of the dough. Press the edges together with a fork and prick the pie in several places.

Step 6
Bake at 180 degrees for 35-40 minutes until the dough turns golden brown.

Step 7
At the end of cooking, brush the top of the pie with sugar syrup. To make the syrup, mix 140 grams of powdered sugar with 2 teaspoons of water and bring to a boil.
