Prepare all the necessary ingredients. For this recipe, you can use any red fish; ready-made fillet works well. I'm using salmon bellies.

First, prepare the dough. Combine the flour and butter cut into cubes. Rub them together with your hands until the mixture resembles crumbs.

Add one egg and 0.5 tsp salt.

Mix everything and gather the dough into a ball. If necessary, add 1-2 tablespoons of ice water. Wrap the dough in plastic wrap and refrigerate for 20-30 minutes.

For the filling, prepare the fish fillet and cut it into small cubes.

Add cubed any hard cheese that melts well when heated, salt, pepper, and nutmeg to taste.

Take out the dough and roll it out to fit the size of the pan, mine is 19 cm in diameter. Carefully transfer it into the pan and use your hands to form edges 2-3 cm high. Prick the bottom with a fork, as shown in the photo.
