
French onion sauce (vegetarian recipe)
Description
Perfectly complements meat, poultry, and side dishes. The sauce turns out thick, so you can eat it with a spoon or use chips for dipping. If you prefer a thinner consistency, add more liquid (water or vegetable broth). Serve the sauce warm. Garnish with paprika, herbs, nuts, and so on. The finished sauce can be stored in the refrigerator for several days.

1. Peel the onion and chop it very finely, heat a frying pan with olive oil and add the onion, cover with a lid.

2. Sauté the onion over medium heat for about 10 minutes.

3. Increase the heat so that all the liquid evaporates and the onions turn caramel-colored.

4. Place the raw nuts in a saucepan, cover with water, and bring to a boil. Simmer for 2 minutes after boiling. Turn off the heat and let the nuts sit in the water until cooled.

5. Using a slotted spoon, remove the nuts from the water and transfer them to a blender. Add nutritional yeast, soy sauce, apple cider vinegar, salt, and black pepper.

6. Pour in 1/3 cup of broth from nuts and half of the sautéed onion, blend everything until a smooth puree forms.

7. Mix the resulting homogeneous puree with the remaining onion mixture; if the mixture seems too thick, add more water from the walnut broth.
