1. First, prepare the dough. Sift flour with a pinch of salt into a small bowl. Cut the cold butter into small cubes and add to the bowl. Rub into crumbs.

3. Wrap the finished dough in plastic wrap and refrigerate for half an hour.

4. Meanwhile, prepare the filling. To do this, fry the bacon cut into small pieces in a skillet.

6. Line the top with parchment paper and place peas on it (you can use any other legumes; in this case, they simply act as a "weight" to keep the base flat and prevent it from puffing up).

7. Bake the cake for about 30-40 minutes until golden brown. Beat the eggs with milk and cream. Season with salt to taste, add pepper. Grate the cheese on a medium grater.

8. Place a portion of bacon on the bottom of the crust, sprinkle it lightly with cheese. Pour in some of the filling. Then repeat the layers. Put the assembled quiche into the oven and bake for about one to one and a half hours at 165 degrees.
