
Crème Brûlée French Toast
Description
Perfect for the table and for drinks. These toasts are best served with whipped cream and fresh berries. The appetizer is ready. Serve immediately.

1. Cut the bread into slices about 3.5 cm thick. You should end up with approximately 6 slices.

2. Whisk together the milk, cream, eggs, sugar, salt, orange liqueur (or zest), and vanilla extract. When using a vanilla bean, split it in half lengthwise and scrape out the seeds. Whisk the vanilla seeds with one tablespoon of pastry cream, then add the second and third tablespoons. Then pour the mixture into the main pastry cream and stir. This helps prevent the vanilla seeds from clumping in one spot.

3. Preheat the oven to 160°C. Arrange the bread slices in a single layer on a tray and pour pastry cream over them.

4. Let sit for 30 minutes, turning the slices to make sure they are evenly coated with the cream. You can also soak them overnight in the refrigerator. In that case, there is no need to turn them. Line a baking sheet with parchment paper. Arrange the slices on the prepared baking sheet, spaced apart. Bake the toasts for 30 to 35 minutes, until a thin knife inserted into the center of a slice comes out slightly moist. Keep the toasts warm until serving.

5. Melt the remaining 2/3 cup of sugar in a small dry saucepan over medium heat, stirring with a spoon or fork, until it is fully melted and turns honey-colored.

6. Evenly drizzle the warm toasts with the prepared caramel using a spoon. Let the caramel set.
