    Prepare the ingredients.

    Place the cottage cheese, 70 g of sugar, a packet of vanilla sugar, 2 eggs and 1 yolk into a bowl (reserve the third egg white for the meringue).

    Blend with a blender until smooth.

    Stir the zest of one lemon into the filling.

    Add baking powder to the sifted flour, and grate the chilled butter.

    For baking it's best to use a removable pan, but you can also use a silicone one, pre‑lined with baking paper. Leave the free edges of the paper for easy removal of the pie from the pan. Spread the butter‑flour crumb into the pan, press it down, and form the edges.

    Place the cottage cheese filling, bake in the oven at 180 °C for 25–30 minutes.

    About 10 minutes before the baking time is up, beat the egg white with a pinch of salt into a soft foam, then, gradually adding the sugar, beat the egg white until stiff peaks form.

    Take the pie out of the oven, spread meringue on top, use the flat side of a silicone spatula to form soft peaks, and return it to the oven for another 5–7 minutes.
