
Trout baked whole in the oven

1. I first tried trout prepared this way in a charming restaurant outside our country. I really liked the dish and decided to recreate it at home. If you don't know how to cook whole trout baked in the oven, keep reading for step-by-step photos.

2. First, the trout needs to be cleaned of scales and innards. It cleans very easily. After that, rinse the fish thoroughly under running water and, using kitchen scissors, make cuts along the backbone to remove the small bones. As a result, you should end up with boneless fillets.

3. Mix the pepper blend and salt (preferably sea salt) in a mortar and rub it all over the inside surface of the fish. I like to marinate meat with lemon juice and recommend you do the same. Cut the lemon into slices and rub the flesh, then place the lemon slices all over the surface as well.

4. Sauté the onion and fennel in vegetable oil until cooked.

5. Now take a baking dish, place the sliced tomatoes and lemon slices on the bottom.

6. Place the fish on this bed, and fill the center with sautéed onion and fennel.

7. Arrange sliced boiled or baked potatoes and tomatoes in a circle on top. Season with salt and spices to taste, then place in the preheated oven. I also drizzle the surface with olive oil. Bake the trout at 190 degrees Celsius for about 35–40 minutes, until a golden crust forms.
