Rinse the fish, gut it, and salt both the outside and inside. Place it on a baking sheet. Arrange pieces of butter on top.

Bake the fish in the oven for 30 minutes at 200 degrees. After 20 minutes of baking, brush the trout with melted fat from the baking tray.

Serve trout with a side dish.
