Instructions

Step 1
Prepare the fish: rinse it under running water, remove the scales, take out the gills (you can cut off the head completely), trim the fins and tail, and remove the innards. After that, rinse the fish thoroughly once again and dry it with paper towels.

Step 2
Mix salt and pepper in a separate container, then rub the mixture on the trout both inside and outside.

Step 3
Wash the lemon and cut it in half. Then cut one of the halves in half again. Thinly slice the first quarter, and squeeze the juice from the second quarter. Mix the juice with vegetable oil and rub the mixture over the fish, both inside and outside.

Step 4
Line a baking sheet with foil and place the fish on it. Make shallow cuts (5-7 cm long) on one side of the fish, and insert a slice of lemon and a small piece of butter into each cut. Finely chop the parsley and mix it with the remaining lemon pieces. Use this mixture to fill the trout's cavity. Then tightly wrap the fish in foil.

Step 5
Preheat the oven to 200 degrees, place the baking sheet inside and bake the fish for 30-40 minutes. The baking time depends on the fish's weight. The larger the fish, the longer it should be baked. Five minutes before it's done, take out the fish and unfold the foil so the trout can brown.

Step 6
Remove the fish and place it on a serving dish. Garnish with herbs and add a side dish.
