
Fried rainbow trout
Description
The recipe won't take much time. I really love fish and seafood, but my husband, like probably most men, prefers meat. However, once he tried the rainbow trout I fried, he said this would now be our holiday dish! The fish turns out incredibly delicious. Serve hot.

Wash and dry the tarragon (also known as estragon) sprigs, separate the stems, and finely chop or crush the leaves in a mortar.

Separate the fillets from the fish, rinse them under running water, and dry.

Heat a large skillet over medium heat. While the skillet is heating, prepare the fish: season the skin with salt and pepper.

When the pan is heated, pour 1-2 tablespoons of olive oil onto it. Do not wait for the oil to boil—just warm it up. Place the fillet in the pan skin-side down, and season it with salt, pepper, and some tarragon.

Depending on the thickness of the fillet, cook it in the pan for 3-4 minutes until a crispy crust forms. Then flip to the other side and cook for 2-3 minutes until fully done.
