
Trout Armenian-style
Description
Armenian-style trout is served with a sauce based on dried apricots, so the flavor will be slightly sweet and piquant. These fish roulades are tasty and healthy; they are not fried but cooked directly in plastic wrap, then carefully unwrapped and served. Serve them with a side of boiled rice or as a separate appetizer. Serve the appetizer to the table.

Remove the skin from the trout fillet and extract the bones. Salt it and season with paprika.

Rinse the tarragon and pepper. Cut the pepper into lengthwise strips.

Place a couple of sprigs of tarragon on the fish, a few pieces of pepper, and a little butter.

Tightly wrap the fish with the filling and seasonings in plastic wrap and refrigerate for 1.5 hours.

After 1.5 hours, place the fish wrapped in foil into a pot of water and cook for 30 minutes at 80 degrees.

Rinse the dried apricots and cut them into small pieces. Combine them in one container with wine and sugar, and cook for 20 minutes over low heat.
