Fillet the trout, leaving the skin on. You can also cut the fish into steaks, in which case it will need to be cooked a bit longer. Save the head and tail for fish soup or broth. Season the fillets with salt and pepper, lightly sprinkle with lemon juice, and let them sit for about 10 minutes.

Thinly slice the onion and celery.

Preheat individual skillets well. Add half a tablespoon of oil to each. Place the trout skin side up and fry for 3-4 minutes.
