
Focaccia with cherries and rosemary
Description
Tasty baked goods for the whole family. Preparing focaccia takes very little time (just half an hour), the rest is mainly the time needed for the dough to rise. Focaccia can be enjoyed both warm and cooled. Focaccia is a great alternative to salads that are usually served before the main courses Serve it warm or chilled. Perfect with tea.

1. Mix 1 2/3 cups of warm (40‑46 °C) water and yeast in a bowl with a mixer. Let stand for about 5 minutes. Add flour, 1/4 cup olive oil, and salt. Stir with a wooden spoon. Knead the dough in the bowl for 1 minute.

2. Place the dough on a generously flour‑dusted surface and knead for 4–5 minutes. Put the dough into a lightly oiled bowl and turn it so that the entire dough is coated with oil. Let it rise at room temperature, covered with plastic film, until the dough doubles in volume, about 1 to 1½ hours.

3. Generously oil the baking sheet. Shape the dough into a rectangle 25×37 cm. Cover the dough with a kitchen towel and let it rise until it doubles in volume, about 1 hour. Rinse the cherries and remove the pits. Preheat the oven to 260 degrees.

4. Mix the chopped rosemary with the remaining 3 tablespoons of olive oil. Make shallow indentations with your fingers on the surface of the dough, then brush with the rosemary oil. Carefully place the cherry halves into the indentations.

5. Evenly sprinkle with sea salt and bake in the middle of the oven for 10 minutes. Reduce the temperature to 230 °C and bake for 12–15 minutes, until golden‑brown. Immediately transfer the focaccia to a baking sheet and let it cool. Serve warm or at room temperature.
