Focaccia with olives and bacon

Description

The recipe won't take much time. You can reheat the focaccia in the microwave if it has already cooled down. The baked good will stay soft and fluffy. This flatbread can be served with soups or main dishes, or simply enjoyed on its own with tea. The dough can be prepared by hand or using a food processor. Serve cooled or slightly warm.

    1. In a small container, mix the yeast, warm water, and sugar. Place in a warm spot for 15–20 minutes, until the mixture becomes bubbly.

    2. Place the flour, salt, 0.5 cup of butter, and the yeast mixture into the food processor bowl. Attach the dough hook attachment and knead at low speed until the mixture becomes uniform. Then increase the speed to medium and continue kneading for another 5–6 minutes. Transfer the dough onto a work surface and knead by hand for 1 minute.

    3. Grease a bowl with a small amount of vegetable oil and place the dough inside, turning it to coat with oil. Let the dough rest for 1.5–2 hours.

    4. When the dough has doubled in size, place it onto a greased baking sheet and stretch it by hand to cover the entire pan. Use your fingers to make indentations, then top the dough with olives, bacon pieces, herbs, remaining olive oil, lemon zest, minced garlic, and season with salt. Let it rest for 1 hour.
