
Sourdough Focaccia
Description
The pastry is prepared simply and quickly. In this recipe I will tell, serve it cooled or slightly warm.

Prepare the ingredients.

Dissolve the starter in warm water.

Add the flour, knead the dough.

Pour 1 tablespoon of olive oil into the dough, add honey, add salt, and mix into the dough.

To activate the starter and speed up the process, place the container with the dough on a pot of hot water for fermentation for 1 hour.

Sprinkle flour onto the work surface of the table, place the dough and knead it by folding. Knead 2–3 times.

Form a flatbread, place it on a parchment sheet, then put the baking sheet back onto a pot with hot water for 2 hours. Cover with a towel to prevent drying.

Make a “boltushka” from 15 ml of olive oil and water, add a pinch of salt.

Using your fingers, make indentations in the dough, spread the prepared “boltushka”, arrange olives and cherry tomatoes, sprinkle with rosemary, and you can drizzle olive oil again.

Bake the focaccia for 25–30 minutes at 170 °C.
