Description
The recipe won't take much time. Surprisingly, these sweets, which automatically associate with Florence due to their name, are actually a dish of Australian cuisine—though this in no way affects their delicious taste. Give them a try, and you won't regret it. Serve chilled.

1. Line a baking pan with parchment paper and grease it. Preheat the oven to 175 degrees. Cut the butter into cubes. Place the butter, cream, sugar, corn syrup, and vanilla essence into a saucepan. Set over medium heat and stir with a wooden spoon until the mixture thickens and becomes syrup-like. Continue stirring and let the mixture thicken for 5 minutes. Remove the saucepan from the heat, then add flour, almonds, and zest. Mix thoroughly with a wooden spoon.

2. Place a spoonful of the mixture into each cavity of the cookie mold. The Florentines should turn out quite thin. Put the Florentines in the top section of the preheated oven and bake for 12-15 minutes.

3. Melt the chocolate in a double boiler. Once it has cooled slightly, use a special brush to apply the chocolate onto the florentines. You can either completely cover the florentines with chocolate or create a decorative pattern. Let the chocolate set before serving.
