Description
The pastry is easy and quick to prepare. An egg baked with spinach on thin crisp dough makes an interesting option for a quick breakfast. To speed up the process, use ready-made dough; you can choose fresh or frozen spinach, and sour cream can be substituted with 1 tablespoon of heavy cream. Happy cooking!

Prepare the necessary ingredients. Thaw the spinach and puff pastry at room temperature. Squeeze excess liquid from the spinach.

Roll out the dough slightly. Using a knife, make cut slits for borders, leaving 1.5 cm from the edges. Brush the borders with a mixture of yolk and 1 tablespoon of water. Prick the rest of the dough with a fork. Place the preparations into a preheated oven at 180°C for 10 minutes.

In a skillet, heat the butter and olive oil and sauté the spinach for 2-3 minutes. Add nutmeg, salt, and pepper to taste. Remove from heat.

Combine with sour cream. Divide the filling among the baked shells, avoiding the edges. On top, crack 1-2 eggs and place the future pie in the oven to bake for 7 to 12 minutes. Baking time depends on your preference for how well-done you like the eggs.
