Green Pea Flan

Description

It works both for a holiday and for everyday meals. Green pea flan is a French dish whose consistency is similar to soufflé. It is served cold. It is usually served with green salad and lightly smoked salmon. What I personally like very much is that green pea flan looks very impressive, has a bright green color, and therefore looks great on a festive table.

    Add the green peas and mint leaves to boiling water and cook for exactly 1 minute, then remove from the water and IMMEDIATELY transfer them to a small pot of ice water. If you delay, the peas and mint will lose their color, and the dish won't look as appealing.

    Once the green peas and mint leaves have sat in ice water for a couple of minutes, place them in a blender bowl and blend until smooth.

    If your blender isn't very powerful and thick purée is hard to blend, add half a glass of cold water.

    Transfer the finely chopped green mixture to another container, add the eggs and cream, and mix very thoroughly. Season with salt to taste and add the juice of half a lemon.

    Take several baking molds and lightly grease them with butter. Transfer our mixture into the molds. Then place the molds in a large baking dish or sheet pan filled with water. The water level should reach halfway up the sides of the molds. Cover everything with foil and place in an oven preheated to 160°C. Bake for 30 minutes.

    Remove the flan from the oven, let it cool slightly, and refrigerate for an hour and a half. Serve cold.
