Flammkuchen

Description

Perfect with tea or coffee. Flammkuchen literally means “flaming tart.” This dish has a very interesting history: long ago in Alsace, bread was baked in ovens before thermometers existed. Women would tear off a lump of dough, roll it paper-thin into a flatbread, and slide it into the oven. If after ten minutes it was crisp with golden-brown edges, the oven was hot enough and they could bake the bread. Then, for flavour, they began brushing the flatbread with rich sour cream — and that’s how Flammkuchen came about. Serve cool or lightly warm.

    First, pour water into a bowl, then add salt and oil to it.

    Add the flour and knead the dough.

    Gradually knead a stiff dough and divide it into three equal parts.

    Roll each piece into a thin flatbread, place on baking paper, and spread evenly with full-fat sour cream.
