
Pistachio cake with marzipan and chocolate glaze

The recipe won't take much time. A recipe for a three-layer cake with pistachios, marzipan, and chocolate glaze. This stunning cake decorated with marzipan roses will be a perfect centerpiece for your celebration. Serve cooled or slightly warm.

1. Make the cake. Preheat the oven to 175 degrees. Grease 3 round cake pans. Line each with a round piece of parchment or wax paper, then grease the paper. Spread the pistachios on a baking sheet and bake in the preheated oven for 7–10 minutes. Transfer to a plate and let cool completely. Finely chop the pistachios and set aside 1/4 cup for garnish. Place the remaining 3/4 cup of pistachios in a food processor. Add sugar and pulse to grind. Transfer to a large bowl and mix in flour, baking powder, and salt. Beat with a mixer at low speed for 30 seconds. Add butter, milk, and vanilla extract, and beat at low speed. Increase speed to medium and beat for 2 to 3 minutes. Add the beaten eggs in 2 or 3 batches, beating well after each addition.

2. Divide the dough among three pans. Bake for about 25 minutes. Let cool for 10 minutes. Remove parchment paper and let cool completely.

3. Place the almond paste into a large bowl. Beat with a mixer at low speed to soften the paste. Add powdered sugar and corn syrup, and beat until smooth. Wrap in plastic and let rest at room temperature for 1–2 hours. Prepare the glaze. Grate the chocolate coarsely and place it in a bowl. Heat the cream in a saucepan until boiling. Pour the hot cream over the chocolate and let stand for 5 minutes. Whisk until smooth.

4. Roll out one-third of the marzipan on a work surface lightly dusted with powdered sugar into a 3 mm thick circle. Trim off the excess with a knife. Form two more circles from the remaining marzipan. Reserve the scraps for decorating the cake.

5. Place one cake layer on a plate with the flat side facing up. Spread 1/3 cup of jam on it, leaving a 6 mm border around the edges. Place one marzipan round on top, then pour 1/3 cup of glaze over it. Make two more similar layers using cake layers, marzipan, and glaze.

6. Glaze the entire assembled cake – the top and sides. Decorate the cake with marzipan roses and pistachios.
