Pistachio cake with raspberries

Description

The pastry is simple and quick to make. This cake is especially delicious with a raspberry filling. In summer, you can add fresh raspberries, and in winter, make the filling from frozen berries. You can use strawberries instead of raspberries. Serve warm or chilled. Perfect with tea.

    To make the cake, prepare the ingredients you need. Sift the flour for the sponge through a sieve to aerate it with oxygen. For the filling, you can use fresh or frozen raspberries.

    In a saucepan, combine butter, milk, and pistachio paste. Place over heat and bring to a boil. The butter should melt.

    Combine the eggs with the sugar and beat until the mixture is light, fluffy, and thick.

    Alternately fold the hot milk mixture and the flour with baking soda into the beaten eggs.

    Pour the finished dough into a 16–18 cm baking tin. Bake in an oven preheated to 180°C for about 40–50 minutes. Adjust the time to suit your oven.

    The finished sponge cake will rise slightly and spring back when pressed. The top will turn golden brown. Remove it from the oven and let cool. Wrap in plastic wrap and refrigerate overnight so it can rest.

    For the filling, dissolve the starch in a small amount of water and mix with the raspberries and sugar. Then, stirring, bring to a boil. The filling will thicken. Cool the finished filling.

    Cut the rested sponge cake into three layers and soak with sugar syrup, pistachio syrup, or water.

    For the cream, take pistachio paste. Combine it with half the cream, the cheese, and the powdered sugar. Whip everything into a thick cream.

    Spread the sponge cake with cream, forming small raised edges. Spread the raspberry filling.

    Assemble the whole cake this way. To make it even, wrap it in acetate film and tighten it in a ring. Refrigerate the cake for 6–8 hours.
