
Pistachio cupcakes

From this amount of ingredients you get 12–15 pieces. You can make cupcakes simply with cream. Or you can add a berry filling to each cupcake. You can serve them with tea or coffee.

Prepare the necessary ingredients for making pistachio cupcakes.

Pour milk into a saucepan and add butter to it. Add pistachio paste and green food coloring. Place over heat and bring to a boil. Pistachio paste is very thick, and when heated it mixes into the batter more easily.

Separately beat the eggs with sugar until the mixture is fluffy and thick.

Gradually fold the milk mixture and the flour with baking soda into the beaten eggs.

Fold in by hand with a whisk. The batter should keep the airiness from well-beaten eggs.

Pour the finished batter into cupcake or muffin cups, filling them slightly below the rim. Bake in an oven preheated to 180°C for about 15–20 minutes. Adjust the time to suit your oven.

The muffins will increase slightly in size during baking. Place them on the table and let them cool.

For the cream, combine heavy cream and confectioners’ sugar. Whip until thick. If desired, you can add pistachio paste to the cream.
