
Pistachio paste

It's not always easy to find in stores, but this paste is very easy to make at home. The recipe for pistachio paste is very simple. You'll need unsalted pistachios; if they're too raw, dry them in the oven. You can optionally add a little nut oil to the pistachio paste. The finished dessert can be served immediately.

If you have unpeeled almonds, pour boiling water over them and after a minute they will easily shed their skins. Then dry the nuts in a dry skillet or in the oven.

Grind pistachios and almonds in a coffee grinder or blender together with powdered sugar until they reach a flour-like consistency.

This is the kind of flour you should end up with.

Pour sugar into a small saucepan and add water. Place over heat.

And we cook until boiling and the sugar is completely dissolved. Do not stir with a spoon! Mix by gently shaking the pot.

Pour the hot syrup into a bowl with the nut flour. You can add a drop or two of almond flavoring.

Makes about 200 grams of paste. Ready-made pistachio paste can be stored in the freezer.
