
Finnish pancakes
Description
Home baking for tea with your cuppa. Don't be alarmed by how the dough behaves in the oven. It may rise in waves or bumps, but it will settle once baking is finished. Finnish pancake has a mild flavour, so you can fill it with fish, meat, or mushrooms. Serve chilled or lightly warm.

Prepare the necessary ingredients.

In a bowl, mix together the eggs, sugar, and salt.

Melt the butter and cool slightly.

Add the flour and milk to the egg mixture. Beat with a mixer until smooth.

At the end, pour in the melted butter and beat again.

Take a large baking sheet. Line it with silicone-coated parchment paper. Pour in the batter. Bake in an oven preheated to 200 °C for 20–25 minutes.

During baking the pancake will puff up and form bumps, but as soon as you take it out of the oven every uneven spot will flatten. When the time is up, take the pancake out of the oven.

Spread jam on a small section.

Roll into a roulade. The pancake rolls up very well and does not break while it is still warm. Cut into pieces the size you want. You can spread the rest of the pancake with sour cream or another filling to taste and roll it into a roulade.

Serve the finished Finnish pancake “Pannukakku” at the table with favourite drinks.

Remove from the oven and serve warm or cooled.
