
Financier with raspberry and almond
Description
Preheat the oven to 170 degrees. Lightly grease mini muffin pans with oil. Heat the butter in a small saucepan over low heat, stirring frequently, until golden brown, about 6 to 7 minutes. Add honey and whisk until combined. Remove from heat. Using a mixer, blend almond flour, sugar, flour, and salt on low speed. Increase speed and add egg whites one at a time, beating well after each addition. Reduce speed and add the warm butter-honey mixture. Increase speed and beat for 45 seconds. Spoon batter into the prepared pans. Place 1/2 teaspoon of raspberry jam on top of each, using a toothpick or knife tip to swirl it into a heart shape. Bake until golden brown, 15 to 20 minutes. Let cool slightly in the pans. Financiers are best served warm on the day they are made, but can be stored in an airtight container at room temperature for up to 3 days. If desired, serve financiers in decorative paper liners, cooled or slightly warm.
