
Duck breast fillet
Description
The recipe won't take much time. Duck meat is usually served with berry or fruit sauces because it pairs perfectly with sweet and sour flavors. The most common sauces for duck are cranberry, mango, and raspberry. To prepare such a sauce, strain the berries or fruits through a sieve to obtain a smooth puree. Then add a little red or white wine, sugar, and salt. Orange or lemon juice is also typically added to the sauce. Serve hot.

Thoroughly wash the orange, grate the zest on a fine grater, and squeeze the juice. Put the zest and pour the juice into a bowl, add lemon juice, a tablespoon of olive oil, rosemary, salt, and pepper. Place the washed and dried duck breasts into this marinade. If desired, you can cut them into pieces. Let the meat marinate for 2 hours in a cool place.

Remove the meat from the marinade and let it drain. Meanwhile, heat a spoonful of olive oil in a frying pan. Place the meat in the pan to sear. Sear the chicken breasts on one side only for 3 minutes.

Now preheat the oven to 200 degrees. Place the chicken breasts in a baking dish, seared side up, and pour the remaining sauce over them. For medium doneness, bake for 10 minutes. For rare, bake for 8 minutes. For well-done, bake for 12 minutes.

Since duck fillet is very tender and the meat is highly nutritious, I always cook it to a light doneness. It turns out very soft and delicate. Duck fillet is best served with vegetable salads or light side dishes.
