
Cod fillet in batter
Description
The dish is prepared without unnecessary complications. The finished sauce should ideally be chilled in the refrigerator before serving. Feel free to experiment with breadcrumbs; for example, I've added curry a couple of times, and it turned out to be a very interesting combination! As for Sriracha sauce, if you can't find it in stores, you can easily make it at home. This sauce has a spicy-sweet flavor. To prepare it, you'll need: 200 g red fresno chili peppers (you can substitute jalapeño or serrano); 2 tablespoons palm sugar; 1 teaspoon medium-grain salt; 1 cup vinegar; 4 garlic cloves. Chop the peppers, mince the garlic, pour vinegar over everything, add a pinch of salt, and let it steep overnight. The next day, heat the mixture on the stove, add the sugar, bring to a boil, and let it simmer for about 5 minutes. Then transfer everything to a blender and blend thoroughly until smooth. Finally, strain the sauce through a sieve—your homemade Sriracha is ready! However, if you don't want to go through the trouble, just follow the simple recipe for battered cod fillet below and skip making the sauce :) Good luck! The finished dish is now ready to be served.

Preheat the oven to 250 degrees. Cut the fillet into small strips.

Take three bowls: put flour in one, crack eggs into the second (and beat them), and in the third mix breadcrumbs with sea salt, black pepper, paprika, lemon pepper, and grated Parmesan.

Now coat the piece of cod in flour on all sides, then dip it into the egg mixture.

Now thoroughly coat the cod in breadcrumbs.

Repeat the same process with the remaining pieces of cod. Grease the baking sheet with olive oil and place the fish on it. Now that everything is ready, put the baking sheet into the preheated oven and bake for 15 minutes at 220-250 degrees Celsius, until golden brown.
