Prepare the ingredients.

Sauté the finely chopped onion in butter in a pan.

Rinse the pike-perch fillet, pat it dry with a paper towel, slice it into pieces, season with salt and pepper.

Cover the top with another layer of dough, also cut in the shape of a fish. From the leftover dough make scales—I used cream‑piping cones for cutting. Brush the dough with a mixture of egg yolk and a tablespoon of milk, and arrange the “scales.”
