Step 1

1. I thoroughly rinse the ready salmon fillet under cold running water, then pat it dry with a paper towel. I sprinkle it with coarse sea salt, add pepper, and drizzle with juice from half a lemon.

Step 2

2. Wash the bell pepper, remove the seeds, and slice it into half-rings. Slice the remaining half of the lemon into thin wedges. Place the fillets carefully into a baking bag, put pepper half-rings and lemon wedges on top of each piece, add a sprig of thyme and some whole peppercorns.

Step 3

3. I make the marinade: pour wine into a bowl, add a spoon of honey and mix thoroughly, then pour the resulting mixture into the bag with the fish.

Step 4

4. I tightly seal the bag and make small cuts on top with a knife to let the steam escape. I put the fish in a preheated oven at 180-190 degrees for 30 minutes.

Step 5

5. I carefully transfer the cooked fish onto a plate so that the pieces don't fall apart.

Step 6

6. Under no circumstances do I discard the remaining liquid; instead, I pour it into a sauce boat – this is the ready-made sweet and sour sauce.

Step 7

7. For serving, place a piece of fish with vegetables on a plate and drizzle with a little sauce.
