
Fried halibut fillet
Description
Cooking delicious fish is not difficult at all. To prepare halibut, you'll need a good skillet with a flat surface, olive oil, and spices. I always use just salt and pepper. You can optionally prepare a tomato salsa. Halibut goes well with green beans, asparagus, and any other vegetables.

Step 1
First, prepare the tomato salsa for the fish. Chop the garlic (it doesn't need to be fine; you can simply slice it). Heat olive oil in a skillet and add the garlic.

Then reduce the heat, add coarsely chopped tomatoes, juice of half a lemon, and chili pepper. Simmer for about 4 minutes. Pour in the wine, add cumin, and cook for another 3 minutes, until the wine has reduced by about one-third. Transfer the finished salsa to a plate.

Now you can prepare the fish: rinse the halibut fillet. Dry the fish thoroughly with paper towels. Season the flesh with salt and pepper.

Heat olive oil in a skillet over medium-high heat. Once the oil is hot, place the fillet skin-side down. Cook for 6 minutes. The key is not to move the fillet during this time, so the skin doesn't tear. Then reduce the heat to medium and flip the halibut. Cook for another 4 minutes. If the fillet is thick, you may need an additional couple of minutes to cook it through. I flipped mine once more and cooked for another 2 minutes.

Transfer the cooked fillet to a plate, drizzle with lemon juice, and top with tomato salsa. Serve with vegetables if desired.
