Rinse the coho salmon fillet and pat dry with a paper towel. Remove any bones, if present.

Cut the fillet into pieces 1.5–2 cm thick. Mix the salt with the sugar and sprinkle each piece on all sides with this mixture. Place the fish in a container.

Cover with a lid or plastic wrap and refrigerate for 12–16 hours. During this time, I recommend turning the fish over several times so it cures well in the brine that forms during the curing process.

Peel the onion and slice it into rings or half-rings.

Place half of the sliced onion under the partially salted fish.

On top of the fish, place the remaining onion and pour vegetable oil over everything. Cover with a lid and refrigerate for another 12 hours.
