
Mullet fillet in batter
Description
Before dipping the fish pieces into the batter, marinate them in lemon juice for about twenty minutes. This results in an appetizing and crispy crust.

1. For preparing this dish, mullet is the best choice. Cut the mullet fillet into long pieces (slightly thicker than a finger), add lemon juice, pepper, salt, and chopped parsley. Then cover the bowl with plastic wrap and let it marinate for about twenty minutes.

2. Prepare the batter. In a bowl, mix two tablespoons of vegetable oil, flour, add half a cup of water and salt. Let it sit for fifteen to twenty minutes to allow the flour to swell.

3. Now beat two egg whites into a dry foam and gently fold them into the batter (the batter will resemble a sponge cake).

4. Dip each piece of fish into the batter (do not shake off the parsley). Using a fork, transfer the fish pieces onto a hot skillet with heated oil. Turn them carefully: hold a wide knife in your right hand and a fork in your left. Use oil as you would for deep frying. Place the cooked fish onto a paper towel.
