
Bean Pâté
Description
Perfect for the table and with drinks. This bean pâté recipe is truly simple and often saves the day when guests are already at the door. 1. Drain the liquid from the canned beans into a separate container. 2. Peel the onion and garlic and chop them finely. 3. In a small amount of olive oil, sauté the onion and garlic until golden. 4. Dice the celery into small cubes and add it to the pan. 5. Add the beans to the vegetables and braise on the pan with a little of the drained liquid for a couple of minutes. 6. Squeeze the juice from the lemon. 7. Chop the nuts slightly. You can leave larger pieces so they stand out in the pâté. If you want a uniform texture, it is better to grind them to a powder. 8. Put the vegetables from the pan into a blender and pulse briefly. 9. Mix the lemon juice with olive oil and vinegar. Gradually add to the blender and continue blending. 10. Thin the thick pâté with the liquid drained from the beans until you reach the desired consistency. 11. Wash the green onions, pat dry, and chop very finely. 12. Add to the pâté and mix well. Salt lightly if needed. This simple bean pâté recipe works for sandwiches with fresh or toasted bread or homemade chips. Do not rush to serve it hot at the table; it tastes much better slightly cooled. It can be served warm or chilled.
