
Beans in Tomato for Winter
Description
Winter preserves at home. To preserve beans in tomato sauce for winter, you will need beans and tomato paste. Choose the beans to your taste—white ones look nice in jars, but I had a choice between dark and speckled beans; I decided to can speckled ones. The main thing is that the bean variety is suitable for this purpose. Some bean varieties lose their shape during cooking, even brief cooking, and turn into puree—such beans are not suitable for this recipe; it is better to make puree from them with fried onions. Serve at the table or store in the pantry.

To make beans in tomato sauce, you will need the following ingredients: beans, water, tomato paste, granulated sugar, 9% table vinegar, and salt.

Rinse the beans thoroughly in clean cold water. Remove any beans that float to the surface; this means the bean is hollow inside and has been eaten by a bug. Cover the bowl of beans with clean water and let soak for 8 hours, or overnight.

In the morning you will see that the beans have increased in size and the water has changed color slightly. Rinse the beans again.

Take a heavy-bottomed pot or a kazan. Transfer the beans and cover them with 1.3 liters of water. Bring to a boil.

Keep the simmer as gentle as possible and cook for 40 minutes with the lid slightly ajar.

Add tomato paste, salt, and sugar. Cook for another 15 minutes.

Try the beans to see if they are tender; adjust the salt and sugar to taste. Remove from the heat, add the vinegar, and stir.

Pack the beans with tomato sauce into sterile jars. Seal with lids or screw them on, depending on what you use for canning.
