
Beans with nuts
Description
The recipe won't take much time. Choose bean varieties that cook quickly. The color of the beans can range from white to purple—according to your preference. Remember to pour boiling water over the beans and leave them for at least an hour at room temperature to soak. If they haven't absorbed the water and expanded several times in size, extend the soaking time to 3–4 hours, or leave them overnight. Beans take approximately 40–60 minutes to cook, depending on the variety. Serve hot.

Prepare the listed ingredients. Place the beans in water and rinse them. Put the beans into a container with high sides and pour in hot water, making sure it covers the beans by about two fingers' width. Let them sit at room temperature for at least 1–2 hours. Keep in mind that the beans will absorb the liquid and swell, so there should be enough water.

Then drain the liquid, rinse the swollen beans, and place them in a pot or cauldron. Pour in 500 ml of boiling water and simmer over medium heat for 40–50 minutes, covered. Be sure to take out one bean and taste it. It should hold its shape well and be tender and soft inside.

After that, turn off the heat and drain the liquid, transferring the cooked beans to a colander. The beans are ready; now it's time to work with the other ingredients. By the way, you can cook the beans in advance or use leftovers from lunch or breakfast.

Peel the onion and rinse it in water, then chop it finely. Sauté the chopped onion in a deep-sided frying pan with heated vegetable oil for about 3-4 minutes.

Make sure it doesn't burn, stirring occasionally to give it a golden color.

Add the boiled beans from the pot to the sautéed onions. Remember, they should be without liquid.

Crush the walnut kernels by hand, with a rolling pin, or using a mortar and pestle. Add to the container with the other ingredients.

Add universal seasoning or other spices and herbs to your taste. Dried basil, oregano, dried mint, etc., go particularly well with beans.
