
Beans with mushrooms in tomato sauce
Description
The recipe won't take much time. Do you think vegetarians eat only salads and greens? Not at all! This dish is perfect for those following a vegetarian lifestyle, as it contains no animal products. It's spicy, filling, and aromatic. You can serve the bean and mushroom mix as a salad side dish, or as a side dish to meat and fish. Serve hot.

1. First of all, I'll deal with the beans, as they require the most time to prepare. I place them in a bowl and cover with cold water, then leave for 4-5 hours.

2. I use wild mushrooms, as they are more aromatic. I clean them thoroughly, wash them, boil in salted water for 1 hour, then drain them in a colander.

3. Boil the prepared beans until cooked (approximately 1-1.5 hours).

4. Peel the onion and wash it, then finely chop. Peel and wash the carrot, then grate coarsely.

5. I place a frying pan on the heat and warm it with a small amount of sunflower oil, then sauté the onion, and after a couple of minutes add the carrot to it.

6. I add the boiled mushrooms to the fried vegetables, mix and cook for another 10-15 minutes.

7. Place the boiled beans in a frying pan, add spices and tomato paste, pour in the water in which the beans were boiled, mix and cook under a closed lid over low heat for about 20 minutes.
