Description

Perfect for winter stocking up. Store the finished canned beans, already jarred, in a dark, cool place. In winter, this is a simple but very tasty dish—a real find! Enjoy the flavors of summer all year round and stay healthy. The preserve is ready for winter storage.

    1. Boil the beans until partially cooked. If desired, the beans can (and even should) be soaked in advance for about 12 hours.

    2. Peel the eggplants, cut them into small cubes, and place them in a large pot (6–7 L).

    3. Peel the carrots, grate them on a medium grater, and add them to the pot with the eggplants.

    4. Peel the tomatoes (score them, pour boiling water over them, remove the stems, dice into medium cubes, and add them to the pot with the other vegetables as well.

    5. Mix everything together and simmer over medium heat for 25 minutes until the vegetables are partially cooked.

    6. After 20 minutes, add sugar, vegetable oil, salt, vinegar, and pepper to the vegetables. Mix everything together.

    7. Add the boiled beans to the vegetables and spices, mix everything together, and let simmer over low heat for 45 minutes.

    8. Peel the garlic and press it through a garlic press. About 10 minutes before the dish is done, add the garlic to the vegetables and stir to combine.

    9. Pack the finished canned beans into previously sterilized jars. Seal the jars and wrap them in a blanket overnight. Enjoy!
