
Stuffed tuna

Wash the tuna carcass, cut off the head, and carefully remove the skin in one piece like a sock, taking care not to damage it. Separate the meat from the bones and cut into small pieces.

Peel the onion and finely chop it; grate the carrot on a coarse grater. Fry the vegetables in vegetable oil in two separate skillets.

When the carrots are almost ready, add the butter, wait for it to melt, then remove the pan from the heat. Cut the tomatoes in half and grate them (discard the skins). In a third pan, add some onion, some carrots (a little less than half of each), and the grated tomatoes. Add bay leaf, salt, spices, and bring to a boil. Remove the pan from the heat.

Mix the tuna with the sautéed onion and carrot, then pass through a meat grinder (or use a food processor). Season the minced mixture with salt and add spices.

Fill the tuna skin with the stuffing. Pour a little sauce into the bottom of the baking dish, place the tuna in it, and pour the remaining sauce over the tuna.

Bake in a preheated oven at 180 degrees for an hour. Periodically baste the fish with the sauce.
