Vegetarian stuffed peppers

Description

The recipe won't take much time. If you use your imagination, you can stuff peppers with just about anything, as long as the ingredients complement each other well. Besides the traditional meat versions, there are many other interesting options, such as this simple vegetarian stuffed pepper recipe. Of course, we'll use vegetables here, and to make the dish not only tasty but also filling, we'll add canned beans. My husband absolutely loves these little peppers, although everyone without exception enjoys them. Try making vegetarian stuffed peppers at home—you'll surely be delighted. Serve hot.

    First, grate the carrots on a coarse grater and finely chop the onions. Add the vegetables to the heated oil and sauté over medium heat.

    Then peel the potatoes, grate them on a grater, add to the pan with the other ingredients, and fry everything until half-cooked.

    Open the can of beans and drain the liquid. Place the beans in a frying pan. Add salt and pepper, mix everything, fry for another couple of minutes, then turn off the heat.

    Now cut off the tops of the peppers and remove the seeds, then stuff them with the sautéed vegetables. Place bay leaves at the bottom of the pot in which you will cook, and fill the pot with the stuffed peppers. Peel the tomatoes and blend them together with garlic into a sauce, season with salt and pepper, then pour the sauce over the peppers. Sprinkle with spices, cover the pot with a lid, and simmer over low heat until the peppers are tender, about 40 minutes.
