
Stuffed peppers with vegetables
Description
Do you love vegetable dishes? Then try stuffing peppers with vegetables and baking them in the oven. This is a very healthy, low-calorie dish perfect for dinner. If desired, you can serve the peppers with a little sour cream.

Step 1

Wash and dry the peppers. Remove the seeds and core. Peel the onion, carrot, and celery. Grate the latter two on a grater, and finely chop the onion.

Slice the cabbage into thin strips or shred it using a special grater. Place it in a bowl and sprinkle with salt. Knead the cabbage with your hands until it releases juice.

Place a frying pan on the stove, pour two tablespoons of odorless vegetable oil into it, and heat it well. Sauté the prepared vegetables in the oil until golden brown.

Now add the shredded cabbage to the pan, put in the sour cream and ketchup. Salt and pepper to taste, then mix well.

Simmer the filling for just a couple of minutes, then add chopped herbs. Mix everything again.

Fill the peppers with vegetables. Pour salted tomato juice with pulp into a baking dish. Place the peppers on top. Bake in a preheated oven at 200 degrees for half an hour.

After thirty minutes, add a spoonful of grated hard cheese to each pepper. Return the peppers to the oven for another 30 minutes. At the end, sprinkle them with herbs. Serve!
