
Moldovan-style stuffed peppers
Description
Usually, the filling consists solely of minced meat, rice, and onion. Here, we'll add sautéed onions and carrots to the filling, as well as some fresh herbs. This will give it a brighter, more summery flavor. Be sure to try it!

Prepare all the ingredients.

Rinse the rice well, pour boiling water over it, and let it sit for 10 minutes.

Chop the onion into small cubes. Grate the carrot on a coarse grater. Sauté the vegetables in vegetable oil until soft.

Remove seeds from the bell pepper and rinse.

Place the minced meat in a deep bowl. You can use any minced meat. I'm using a pork-beef mix.

Add rice, finely chopped herbs, sautéed vegetables (onion and carrot), salt, and ground pepper to taste to the minced meat.

Mix everything well.

Fill the peppers with the prepared stuffing and place them upright in a thick-bottomed pot or saucepan. Dissolve tomato paste in boiling water, add salt to taste, and pour the mixture over the stuffed peppers until the liquid reaches almost halfway up the peppers. Cover the pot and simmer over low heat for 40–50 minutes.
