A simple way to prepare ahead for later. I think everyone knows that peppers are very tasty when stuffed, and meat most often serves as the filling. However, I offer you an even more interesting option—a recipe for stuffed peppers for winter. Here we will also put a filling inside the pepper (of course, not a meat one) and marinate it so that in winter you can serve a tasty and aromatic dish. I usually stuff peppers with cabbage, sometimes I add carrots or onion; you can slightly expand on my recipe and add, say, tomatoes, eggplants, or other vegetables. In this simple stuffed pepper recipe for winter, you can freely use your imagination, but the version I offer you is very, very tasty—juicy little peppers with crunchy cabbage inside; try it yourself. Store in a cool, dark place.

    First, let's prepare the filling for our peppers. Shred the cabbage and add grated carrot, caraway seeds, 2 tablespoons of salt, and 2 tablespoons of vinegar. Knead the cabbage well with your hands and leave it for 2 hours so it releases juice and marinates.

    Now we remove the stem from the pepper and clean out the seeds, then rinse it thoroughly under cold water.

    Lower the pepper into boiling water for 3 minutes, then remove it and let it drain.

    When the peppers have cooled, we start stuffing them. Squeeze the juice from the cabbage and carefully place it inside each pepper. From this entire batch of peppers, I ended up with 8 one-and-a-half-liter jars.

    Now place the spices and herbs at the bottom of each jar, then arrange the stuffed peppers. Pour hot marinade over the peppers, adding 4 tablespoons of vinegar and 1 tablespoon of salt per 1 liter of water to the marinade.

    Next, sterilize the jars of peppers in marinade for 20–30 minutes and seal them. If you plan to store them in the refrigerator, you can close the jars with regular screw-on lids. Turn the sealed jars upside down and leave them until completely cool. Cool jars with regular lids with the lid facing up. Enjoy your meal!
