First, wash the potatoes very thoroughly, as we won't be peeling them for this recipe. 2. Dry the washed potatoes and rub them with salt and spices of your choice. You can also brush each potato with oil. 3. Wrap each potato in foil and place in a preheated oven for 20 minutes. Bake until the potatoes are soft—you might need to leave them in the oven a bit longer. 4. Remove from the oven, let them cool slightly, then cut off the top of each potato. 5. Carefully scoop out some of the potato from the center with a spoon, leaving the sides intact. 6. Mix the scooped-out potato with sour cream. Add chopped herbs or seasonings to taste, if desired. 7. Pack this mixture back into the potato shells, then top with grated cheese. Return to the oven and bake until the cheese begins to melt. Done! Garnish with fresh herbs and serve.
