
Fusion Stuffed Eggs
Description
Suitable for both holidays and everyday meals. You'll get a dish with a Thai accent, because we use soy sauce, curry paste, and coconut milk to make it. Serve it with a spicy sauce of your choice and it will be a hit.

1. Boil the eggs. Make sure they do not crack, because you will need whole eggs. Cool and peel them. Carefully cut the eggs in half lengthwise and remove the yolks. Set the whites aside on a separate flat plate.

2. For the dressing, in a bowl mix coconut milk, soy sauce, and one tablespoon of lemon juice. Mix all the liquid well.

3. Add red curry paste to the dressing and mix again.

4. Now add the egg yolks to this mixture and rub them in well until you have a smooth, uniform mass. Stuff the egg white halves with the resulting filling. If your shrimp are fresh, drop them into boiling water for a couple of minutes and clean them. In a separate bowl, drizzle them with the remaining lemon juice, gently toss, and place one shrimp on each egg. All that remains is to garnish with cilantro, and the dish is ready to serve. Serve a spicy sauce alongside these stuffed eggs to highlight the Thai flavor.
